1 T butter
1 T flour
Salt and pepper
¾ C milk
Melt butter. Stir in
flour, salt and pepper. Add milk all at
once. Cook and stir over medium heat
until thickened and bubbly plus one more minute. Makes ¾ C (12 1-T servings).
Cheese sauce: Omit salt and add ¾ C shredded Swiss, American
or Gruyere cheese or ¼ C crumbled bleu cheese.
Curry sauce: Cook ½ to 1 tsp curry powder in melted butter
for 1 minute. May add 1 T chopped chutney in cooked sauce. Serve with fish or poultry.
