Toffee Popcorn

1 bag low fat micro popcorn, popped (or 1/2 cup kernels, popped)
1/3 cup butter
1/3 cup sugar
1/4 cup corn syrup
1 tablespoon water
1/2 teaspoon vanilla

1/8 teaspoon baking soda

Melt butter in med. saucepan over low heat. Stir in sugar until completely dissolved. Add corn syrup and water. Bring to a boil, stirring often. Boil for about three minutes, OR until mixture JUST begins to turn tan, almost like the color of chino pants. Add vanilla and soda and mix well. Pour over popcorn and stir. (Shaking in a brown paper grocery bag works well.)
