Substitutes and Fixes

Baking Powder

1 part soda
2 parts cream of tartar

Mix & add same quantity of flour to keep from hardening.  Use same as baking powder.

Grease Removal
If the food you are cooking has to much grease, drop ice cubes into pot.  Grease will quickly adhere to cubes.  Remove them.

Over-salting
If you’ve over-salted soup or vegetables, add cut raw potatoes & discard once cooked and absorbed salt. 
OR add a tsp. of cider vinegar & a tsp. of sugar to absorb salt.

Substitutes for Wine
Soups & Entrees: Beef broth, Tomato juice, Cider vinegar, Liquid from canned mushrooms
Desserts: Apple cider Peach syrup
Rum: Pineapple juice, Syrup, Almond flavoring
Dry-Unsweetened Wine: Water, Ginger ale, White grape juice, Chicken broth, Cider vinegar
Sherry: Orange juice, Pineapple juice
Cheese – Fondue: Chicken broth, Water, Ginger ale

Korsch/Coniac: Syrup or cherry juice, Peach juice
