Sky-high Piecrust

6 C flour
1 C shortening, chilled
1 C butter or lard, chilled
2 tsp salt
2 T sugar
1 egg, slightly beaten

Food process ingredients.  Stir in

2 T lemon juice
2/3 C ice cold water. 

Wrap in plastic and refrigerate.  Makes 2 crusts.


To bake without a filling, roll out dough between two sheets of plastic wrap.  Lay in pie dish and crimp edges.  Liberally pierce pie sides and bottom with fork holes.  Bake at 450 for 10-12 minutes.
