3 lbs. or 6 chicken breasts halves
½ tsp salt or seasoned salt
1/8 tsp pepper
3 T brown sugar
1 T cornstarch
¼ tsp salt
1/8 tsp ground ginger
1/3 C orange marmalade
2/3 C orange juice (or use half chicken broth)
1 T lemon juice
1 orange, thinly sliced
Season chicken with salt and pepper. Brown in frying pan. Combine remaining ingredients except orange
slices, and add to chicken. Cover and
simmer about ½ hour or until chicken is fork tender. Add orange slices; simmer 10 minutes longer. Serve with Almond Rice.
Almond Rice
2 C rice
2 T butter
¼ tsp salt
¼ C dry roasted almonds
¼ C dry currants or raisins
Prepare rice, adding butter and salt. Just before serving, stir in almonds and
currants.
