Fried Rice

The rice for this recipe must be cooked fluffy and be at least one day old.  Heat three cups of rice in ¼ C cooking oil.  Toss it until hot and golden.
Add:
4 minced scallion green onions, thinly sliced
1 tsp salt
½ C cooked pork or ham, or 1 C cooked diced shrimp


When these ingredients are well mixed, hollow a center in the rice.  Break 3 eggs into the hollow and scramble until semi cooked, then stir them into the rice mixture.  Sprinkle with 4 ½ tsp soy sauce, ¼ C minced parsley leaves, and serve with podded snow peas.
